Gluten-free grains: what pulses can do for you

Did you know 2016 is the International Year of Pulses? That’s right. The humble lentil, kidney bean, chickpea and faba bean have been elevated to superstar status, for 12 months at least!
Pulses are a fabulous source of dietary proteins, carbohydrates, minerals and B-vitamins. But outside of traditional pulse-loving countries like India, the Near East and North Africa, the nutritional, economic, environmental and social value of pulses has yet to be truly appreciated and realised.
